Gingerbread

Sugar and Spice and all things nice. Lovely for Christmas.
Bake well in advance as this will improve it’s flavor and will become softer when stored in an airtight jar and kept in cool place.
450g ( 16 oz ) plain ( all -purpose ) flour
1 level tbsp bicarbonate of soda
140g ( 5 oz ) ground almonds
450g ( 16oz ) honey
140g ( 5 oz ) unsalted butter
110g ( 4 oz ) very finely chopped lemon and orange peel
grated rind of 1 lemon ( unwaxed or organic )
2 level teaspoons of ground ginger
1 heaped teaspoon cinnamon
1/2 teaspoon of ground cloves
a pinch of ground cardamom
a pinch of ground nutmeg
heat honey and butter gently until butter has melted
leave to cool
sift the flour, bicarbonate of soda, ginger, cinnamon, cloves, nutmeg and cardamom into a mixing bowl
add the grated lemon rind, ground almonds and chopped peel
pour the honey mixture over
knead it into a dough, if the mixture is too runny add some more flour
roll out on a floured board and cut into a variety of shapes
bake for 8-10 minutes at 180 C ( 350 F / Gas 4 )
glaze or decorate with icing
